Cheese Shortbread Thumbprints

- 1 1/2 cups (375 mL) BLACK RIVER - Monterey Jack, or Cheddar, shredded
- 1/2 cup (125 mL) SALERNO - Grated 100% Parmesan Cheese
- 6 tbsp (125 mL) GAY LEA - Salted Butter, softened
- 1 egg, separated
- 1/4 tsp (1 mL) pepper
- 1 cup (250 mL) all purpose flour
- 1 cup (250 mL) skinned hazelnuts, or almonds, finely chopped
- 1/2 cup (125 mL) GAY LEA - Original Sour Cream
- 1 tsp (5 mL) dried dill
- 36 smoked salmon, small strips
