Ingredients

• 250 g dried chickpeas
• 10 g fresh coriander
• 10 g fresh parsley
• 2 red onions
• 2 cloves of garlic
• 1 tsp Ras el Hanout
• 2 tsp ground cumin
• 1 tsp salt
• 1 tbsp sesame paste (tahini)
• Juice and zest of 1 organic lemon
• ½ tsp baking powder
• 250 g Greek yoghurt
• 6-8 cherry tomatoes
• 70 g of plucked lettuce
• 6 pita or naan breads
• 200 g hummus
• coriander greens for serving
• lemon for drizzling
• Salt and pepper
