Ingredients

• 8 ounces white mushrooms, trimmed and sliced in half
• 1 cup yellow onion, quartered
• 2 pounds ground bison
• 1 tablespoon fresh thyme leaves
• 1 cup panko breadcrumbs
• 2 eggs
• 1/2 cup milk
• 2 teaspoons kosher salt, plus more as needed
• 1/4 teaspoon freshly ground black pepper, plus more as needed
• 7-8 slices uncured pork bacon
• 3 tablespoons ketchup, plus more for serving
