  • 1 onion
  • chopped
  • 2 stalks celery
  • 2 tsp (10 mL) chili powder
  • 1/2 tsp (2 mL) dried thyme
  • 1/4 tsp (1 mL) salt
  • 1/8 tsp (0.5 mL) cayenne pepper
  • 1 sweet yellow or red pepper
  • 1 large sweet potato
  • peeled and diced (about 3 cups/750 mL)
  • 2 cups (500 mL) low-sodium vegetable broth
  • 3 tbsp (45 mL) whole wheat flour
  • 2 cups (500 mL) milk
  • 1-1/2 cups (375 mL) drained rinsed cooked or canned unsalted chickpeas or black-eyed peas
  • 1 cup (250 mL) chopped fresh tomatoes
  • 3 tbsp (45 mL) red wine vinegar
  • 1 green onion
  • sliced or 1/4 cup (60 mL) chopped fresh parsley
