Nong's Chicken Tacos with Pineapple Salsa – Nongs

Ingredients

• 2 tbsp olive oil
• 1 lb bonless skinless chicken thighs
• Salt, to taste
• Ground pepper, to taste
• 1 sprig fresh thyme
• 1 sprig fresh oregano
• 1 small onion, diced
• 2 tbsp fresh ginger, chopped
• 4 cloves garlic, minced
• 1 tsp ground cumin
• ½ tsp Sichuan pepper
• 1 tsp smoked paprika
• ¼ cup Nong's Khao Man Gai Sauce
• 1 cup chicken stock
• ½ tbsp lemongrass paste
• Hard or soft taco shells
• Lettuce for topping
• 1 cup fresh pineapple, diced
• 1/3 cup red bell pepper, diced
• ¼ cup red onion, diced
• 1/8 cup green chili, diced
• 1/8 cup cilantro, chopped
• 1 tbsp lime juice
