Ingredients

• 2 green onions, chopped
• 1/4 cup chopped fresh cilantro or parsley
• 1 15-15.5 oz cans black-eyed peas with jalapeno
• 1 15 oz. can black beans (can replace black beans with another can of black-eyed peas if desired)
• 1 10 oz. can Hatch diced tomatoes & green chilies, mild (or Rotel)
• 2 15.25 oz. cans whole kernel corn
• 1 15 oz. bottle zesty Italian dressing
• Optional: 1 small avocado, chopped or half of fresh jalapeno, seeds removed
