Ingredients

• 2 large potatoes, peeled and diced
• 1 medium onion, finely diced
• 3/4 cup carrots, finely diced
• 3/4 cup celery, finely diced
• 2 cups water
• 32 oz chicken broth
• 18 oz Velveeta cheese
• 1 cup light cream
• Salt and pepper to taste
• 1/8 cup chopped fresh parsley (or 2 tsp dried flakes)
• 6 oz Canadian bacon, diced
• 4 TBSP cornstarch
• 1/2 cup cold water
