Ingredients

• 1 large onion , diced
• 4 garlic cloves , minced
• 2 tablespoons taco seasoning
• 1 teaspoon cumin
• 1 teaspoon coriander
• 1 teaspoon salt
• 1 teaspoon pepper
• 1 can diced green chiles , 4 oz
• 1 can black beans , 15 oz, rinsed and drained
• 3 ⁄ 4 cup sour cream
• 4 cups monterey jack cheese
• 1 can red enchilada sauce , 15 oz
• 10 - 12 8 inch flour tortillas
