Beef Enchiladas

Ingredients

• 1 teaspoon ground cumin
• 3 tablespoons all-purpose flour
• 1 medium white onion, finely chopped
• 1 teaspoon salt
• 2 cloves garlic, finely chopped
• 1 pound 90% lean ground beef
• 10 yellow corn tortillas, preferably Mission Super Size "Super Soft
• ½ teaspoon dried oregano
• 1 can tomato sauce
• 2 tablespoons vegetable oil, for brushing the tortillas
• 2 cups chicken broth
• 3 cups shredded Mexican blend cheese, preferably Tilamook
• 2 tablespoons vegetable oil
• Heaping ¼ teaspoon baking soda
• 1 jalapeño pepper, seeded and minced
• 3 tablespoons chili powder
