- 6 salsify roots, washed and dried
- 250ml/9fl oz chicken stock
- 450g/1lb purple sprouting broccoli
- 200g/7oz pancetta , sliced into lardons
- 75g/3oz plain flour
- 200ml/7fl oz ready-made game jus
