Agrodolce

Techniques

Agrodolce is an Italian sweet-and-sour sauce or condiment, its name combining agro ("sour") and dolce ("sweet"). It comes from southern Italy, particularly Sicily and Campania, where sweet-sour flavor combinations have long been part of regional cooking.

The base is vinegar or citrus juice balanced with sugar or honey, often built up with garlic, onion, herbs, and spices; the exact balance and add-ins vary by region and cook. Sicilian versions often include raisins and pine nuts; Campanian versions may lean on balsamic vinegar and honey. Agrodolce is used as a sauce or glaze for grilled, roasted, or braised meat, fish, and vegetables, and as a dressing for salads or cheese plates.
