Candied Lemon

Techniques

Candied lemons are lemon slices or peel that have been simmered in sugar syrup until tender, translucent, and sweetened, then dried, sometimes with a final coating of sugar. The technique is common in Mediterranean and Middle Eastern cooking, where lemons have long been a kitchen staple. They're used as a garnish or ingredient in cakes, tarts, and cookies, and add a bright citrus note to rice pilafs, tagines, and roasted meats; candied lemon peel is also used to infuse syrups, liqueurs, and cocktails. Candied lemons should not be confused with preserved lemons, a Moroccan condiment made by salt-curing whole lemons rather than sweetening them; the two are used very differently in cooking.
