Curly parsley is a variety of parsley (Petroselinum crispum) with tightly ruffled, curled leaves and a milder, less aromatic flavor than flat-leaf (Italian) parsley. Because its sturdier leaves hold their shape well on a plate, it is used mainly as a fresh garnish, while flat-leaf parsley is the more common choice for cooking into sauces, dressings, and dishes where a stronger herb flavor is wanted. Its bright, slightly peppery taste pairs well with butter, olive oil, garlic, lemon, and most meats, fish, soups, and salads.
