Fonio is a small-seeded cereal grown in West Africa. Its mild flavor and fine texture suit porridges, steamed grain dishes and accompaniments to stews. The grain sold for cooking is typically cleaned and hulled, sometimes also precooked.
Cooking methods and liquid requirements depend on processing, so follow the package directions. It is naturally gluten-free, although cross-contact during handling matters for people who must avoid gluten. Fonio is not couscous, even when served similarly.
