Montasio is a cow’s-milk cheese with protected designation of origin status, produced in Friuli Venezia Giulia and specified areas of eastern Veneto in northeastern Italy.
Its texture and flavor change with maturation. Younger cheese is relatively mild and compact; longer aging produces a firmer cheese with more pronounced flavor. Montasio is served as a table cheese and used in cooking, including the Friulian dish frico.
See the Montasio consortium’s description for its production area and maturation categories.
