Northern Ireland Cuisine

Regional & Cultural Terms

Northern Ireland cuisine is the traditional cooking of Northern Ireland, built on locally sourced potatoes, dairy, meat, and seafood. Potatoes are the defining staple, appearing in dishes like champ (mashed potatoes with scallions) and colcannon (mashed potatoes with cabbage or kale). The Ulster Fry, a cooked breakfast of sausages, bacon, eggs, and fried bread (often including soda bread and potato bread), is the region's best-known dish. Good-quality beef and lamb feature in stews, pies, and roasts, while coastal areas draw on fresh fish, mussels, oysters, and scallops, including dishes like fish and chips and seafood chowder.
