New England style lobster roll - Olive Oils from Spain

Ingredients

• 8 oz. of cooked and shelled lobster (or prawns if preferred)
• 3 tbsps. homemade mayonnaise
• 2 tsp. of Perrins sauce
• 1 tsp. lemon juice
• ½ tsp. of Tabasco sauce
• ½ teaspoon of salt
• ½ teaspoon of black pepper
• 1 oz. of peeled celery, cut into small squares
• 4 tablespoons of ( 2 tbsps. for the mayonnaise and 2 tbsps. to heat the hot dog rolls)
• 2 whole (uncut) hot dog rolls
• 1 tbsp. of finely chopped chives to garnish.
