Ingredients

  • 100 milliliter vegetable oil
  • 60 grams plain flour
  • 2 onions, diced
  • 3 sticks celery, finely diced
  • 2 green peppers, diced
  • 4 garlic cloves, minced
  • 330 milliliters lager (replace with 300ml chicken stock to make alcohol free)
  • 1 liter good-quality chicken stock
  • 600 grams chicken thighs, boneless and skinless
  • 500 grams andouille sausage (or any smoked sausage if not using pork), sliced
  • 1.5 tablespoons smoked paprika
  • 0.5 teaspoon cayenne, or to taste
  • 1 bay leaf
  • 175 grams okra, sliced
  • 300 grams raw king prawns
  • salt and freshly-ground pepper
  • Tabasco
  • cooked white rice
  • 2 spring onions, sliced crusty bread (optional)
