Moist apple cake - Penny Melville-Brown

Ingredients

• 340g self-raising flour
• 1 rounded teaspoon baking powder
• 1 teaspoon salt
• 340g soft brown sugar or honey
• 170g butter, cubed
• 100g dates, chopped
• 30g walnuts (or Brazil nuts), shelled and chopped
• 4-5 medium cooking apples, peeled, cored and roughly chopped (650g prepared weight and didn’t bother to peel)
• 4 eggs, beaten
• 1 teaspoon vanilla bean paste
