Bayou Lafourche Style Jambalaya Recipe

Ingredients

• 1 fryer chicken, cut-up & deboned (3 to 4 lbs.)
• 3 tsp. corn oil
• 1 tbsp. Salt
• Cajun seasoning
• 1 lg. Onion chopped
• 1/2 cup chopped celery
• 1/2 cup chopped bell pepper
• 5 cups water
• 6 chicken bouillon cubes
• 1/8 cup parsley, chopped fine
• 2 cups uncooked rice
