Ingredients

• 1 can (12 ounces) chipotle peppers in adobo sauce
• 2–3 canned tomatillos
• 2 tablespoons minced garlic
• 1 whole chicken, cooked, de-boned and diced (reserve broth)
• 1 medium onion, chopped finely
• 2 tablespoons olive oil
• 1 can (7 ounces) diced green chilies
• 1 tablespoon chili powder
• 1/2 teaspoon ground cumin
• Salt and pepper to taste
• 2 tablespoons crema agria or sour cream
• 20 corn tortillas
• 2 cups grated Cheddar cheese
