Ingredients
- 200 g feta, cut into 4 rectangular blocks (optional)
- 5 spring onions, thinly sliced on an angle (50g)
- 2 tbsp lemon juice
- 3 tbsp olive oil
- salt
- 2 Lebanese (mini) cucumbers or 1 regular cucumber, cut into 1cm dice (300g)
- 4 tbsp tahini
- 6 ripe plum tomatoes (or any other sweet red tomato), cut into 1cm dice (650g)
- 1 tsp za’atar
- 15 g coriander, roughly chopped
- 1 red pepper, deseeded and cut into 1cm dice (150g)
