- 1 Medium Pumpkin
- 2 Onions
- 1L Vegetable Stock
- 2 tbsp Olive oil
- 6 Garlic cloves (or adjust to your taste!)
- 100g Split red lentil
- 10g Thyme
- Plenty of salt and pepper
- 100g Mascarpone Cheese
- Optional - 1/2 lemon juiced, splash of Worchester sauce, and Chilli Flakes
