Ingredients

• 1 jalapeño, sliced (seeds removed)
• Hot sauce to taste
• 1 pound Mexican chorizo
• Oil for the griddle
• Optional Toppings: Avocado, sour cream, chopped cilantro
• 6 eggs
• 1/2 cup half & half (or milk)
• 4 large flour tortillas
• 1/2 onion, diced
• 1 red bell pepper, diced
• 1 cup shredded pepper jack cheese
