Ingredients

• For the chicken taquitos
• 1 tbsp vegetable oil, plus extra for frying
• 1 onion, finely chopped
• 1 garlic clove, crushed
• 1 tsp ground cumin
• ½ tsp smoked paprika
• 3 cooked chicken fillets, shredded
• 100g grated Cheddar cheese
• 8 tortilla wraps
• For the tomato salsa
• ½ green chilli, seeded if preferred
• 1 large tomato
• 1 spring onion, chopped
• Handful coriander leaves, chopped
• Store bought guacamole, optional to serve
