Spinach-Artichoke Chicken Stew | Savory

Ingredients

• 2 tbsp canola oil, divided
• 2 lbs bone-in chicken thighs
• 1 onion, chopped
• 5 cloves garlic, minced
• 1 tbsp flour
• 3/4 cup low-sodium chicken broth
• 1 (10 oz) pkg frozen chopped spinach, thawed and drained
• 1 (14 oz) can quartered artichoke hearts, drained and rinsed
• 1/4 cup chives and onion cream cheese spread, or regular cream cheese
• 3 tbsp grated Parmesan
• 1/4 cup thinly sliced green onions
• 1 (18 oz) tube polenta cooked, to serve (optional)
