- 2kg Dry Cure Gammon Joint
- 1 large onion, peeled and roughly chopped
- 1 large carrots, peeled and roughly chopped
- 1 large leek, trimmed and roughly chopped
- 1 large cinnamon stick
- 2 bay leaves
- 1 tsp of black peppercorns
- 2 x 500ml bottles stout
- Cloves to stud
- English mustard
- Treacle
- Orange zest & juice
