- 1 x 5 kg ham joint
- 4 tbsp black treacle
- 1 tbsp black peppercorns
- 2 bay leaves
- 2 oranges, cut into wedges
- 1 handful of cloves, to stud
- 350 ml orange juice
- For the glaze:
- 80 g orange marmalade
- 55 g light brown sugar
- ¼ tsp ground ginger
- 1 pinch of ground cloves
