• 7 cups brioche bread, cut into cubes
• 1 cup ripe peaches, pitted and chopped
• 5 eggs
• 2 cups whole milk
• 1 tsp vanilla extract
• 1/8 tsp salt
• 1/4 cup white all-purpose flour
• 2/3 cup brown sugar
• 3 tbsp butter, softened
• 1/2 cup maple syrup
• 1 ripe peach, pitted and chopped
• 1 cup heavy whipping cream, cold
• 2 tbsp white sugar
