Couscous and Feta Mediterranean Salad

Ingredients

• 1 cup Couscous large "jewel" type
• 1 whole cucumber Split lengthwise and seeded
• 1 tablespoon White wine vinegar
• 3 tablespoon Olive Oil
• 1 teaspoon kosher salt
• 1/2 teaspoon Freshly ground pepper
• 1/3 cup Kalamata Olives Pitted and chopped in half
• 1/2 teaspoon Dijon mustard
• 2 tablespoon cilantro chopped
• 1 can Chickpeas rinsed, drained and dried
• 2/3 cup Feta cheese
• 3 sliced scallions
• 2 Carrots peeled and chopped finely
