Vegan Potato Enchiladas - Brand New Vegan
I made these Vegan Potato Enchiladas last night and they couldn't be easier! And they're far tastier (& cheaper) than any restaurant!
Ingredients
- 2 large Yukon gold potatoes
- 1/2 white onion
- 2 cloves garlic
- 4 oz mushrooms
- 1/4 cup low-sodium vegetable broth
- 1/2 tsp chile powder
- 1/4 tsp black pepper
- Small handful of fresh spinach
- 1 1/2 cups enchilada sauce
- 8 corn tortillas
