Ingredients

• 12 good quality beef chipolatas
• 1 carrot coarsely chopped
• 1 onion, coarsely chopped
• 1 baby fennel, coarsely chopped
• 1 celery stalk, coarsely chopped
• 2 cloves garlic
• 2 x 400g cans of white beans, drained and rinsed
• 400g can of chopped tomatoes
• 2 cups beef stock
• 1 bunch each of thyme and rosemary, tied in a bundle with kitchen string
• 1¼ cups coarse fresh breadcrumbs
• ¼ cup coarsely chopped flat-leaf parsely
• Baby rocket and fennel salad, to serve
