Warm hearty shakshuka – Richardson Wines

Ingredients

• 1 medium white onion, chopped
• 1 red pepper, chopped
• 4 garlic cloves, chopped
• 2 tsp paprika
• 1 tsp cumin
• 0.25 tsp chili powder
• 1 400ml can of whole peeled or diced tomatoes
• 4 large eggs
• 100g chorizo, chopped
• small piece of feta for crumbling on top
• salt and pepper , to taste
• 1 pinch of chopped fresh coriander
• 1 pinch of chopped fresh parsley
