- 180 grams english spinach leaves, stems removed
- 1 tablespoon light olive oil spread
- 2 1/2 tablespoon plain flour
- 2 cups skim milk
- 1/2 cup grated reduced-fat tasty cheese
- 1/4 teaspoon ground nutmeg
- 6 eggs, at room temperature
- 4 green onions, finely chopped
- 1 pinch cayenne pepper
- 4 slices sourdough bread, toasted, lightly buttered, to serve
