Creamy Cauliflower Soup – Vektween

Ingredients

• 1 large head cauliflower, cut into florets
• 1 vidalia onion, chopped
• 2 cloves garlic, chopped
• 1 ½ tsp sea salt, divided
• ½ tsp pepper
• 2 tbsp olive oil OR ghee
• 4 cups Vegetable or Chicken Broth (I used Imagine No Chicken Broth)
• 1 cup water
• ½ cup raw cashews
• 2 tbsp chives chopped (optional)
