  • 1 poblano pepper, seeded and diced

  • 2 (15-ounce) cans red kidney beans, rinse and drained, or 3 cups cooked red kidney beans, divided
  • 1 (15-ounce) can diced tomatoes, undrained
  • 2 tsp minced chipotle peppers in adobo sauce
  • ½ cup low-sodium vegetable broth, plus more as needed
  • 2 tsp apple cider vinegar
  • 1 tsp molasses
  • ½ tsp liquid smoke
  • 1 Tbsp smoked paprika
  • 2 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • ½ tsp sea salt
  • ¼ tsp black pepper
