Ingredients

  • 2 tbsp olive oil
  • salt and black pepper
  • 1½ tsp hot paprika
  • ¾ tsp ground nutmeg
  • 1 tbsp tomato paste
  • 500 g runner beans, trimmed and sliced on the diagonal into 2cm pieces
  • 3 large garlic cloves, crushed
  • 1 tsp cumin seeds
  • 6 medium tomatoes, peeled and roughly chopped (500 g)
  • 500 ml vegetable stock
  • 10 g coriander, roughly chopped
  • 2 onions, roughly chopped (240 g)
