Ingredients
- 2 tbsp olive oil
- salt and black pepper
- 1½ tsp hot paprika
- ¾ tsp ground nutmeg
- 1 tbsp tomato paste
- 500 g runner beans, trimmed and sliced on the diagonal into 2cm pieces
- 3 large garlic cloves, crushed
- 1 tsp cumin seeds
- 6 medium tomatoes, peeled and roughly chopped (500 g)
- 500 ml vegetable stock
- 10 g coriander, roughly chopped
- 2 onions, roughly chopped (240 g)
