Alper Sarikaya — Tomatillo Chicken Stew

Ingredients

• 1 1/2 lbs tomatillos
• 1-2 jalapenos, stems discarded, chopped
• 1 clove garlic, chopped
• 1 tsp salt
• 1 tbsp citrus juice, lime or lemon
• pinch sugar
• 2 lbs chicken thighs, trimmed of excess fat, cut into 1-inch cubes
• salt, to taste
• black pepper, to taste
• olive oil, extra virgin
• 2 yellow onion, chopped
• 2 cloves garlic, minced
• 1 tsp cumin, ground
• 1 tsp coriander, ground
• 1 1/2 C chicken broth
• 2 C tomatillo sauce
• 1 tsp oregano, dried
• 1/2 C (about 1 bunch) cilantro, stems and leaves, rinsed and chopped
• 1 C rice, uncooked
