Peach-Coconut Cake – Campus Store at College of the Ozarks

Ingredients

• 2 eggs, beaten
• ½ c. vegetable oil
• 1 c. plain yogurt
• 1 tsp. vanilla
• 1 c. whole wheat flour
• 1 c. all-purpose flour
• ½ c. sugar
• 1 tsp. baking powder
• 1 tsp. baking soda
• 1 c. flaked coconut
• 1 ½ c. fresh peaches, sliced or (try our Student-Made Peach Fruit Spread as shown in the photo)
• 1 Tbsp. cinnamon
