• 4 cups potatoes, peeled and sliced into thin slices
• 1 tablespoon olive oil
• 2 ounces pancetta, thickly sliced
• 4 tablespoons butter
• 3 cups sweet onions, thinly sliced
• 6 eggs
• 1/2 cup milk
• 1 cup White Cheddar cheese, shredded
• 1 teaspoon salt
• 1/2 teaspoon ground black pepper
• 1 teaspoon fresh rosemary, finely chopped
• 1 teaspoon fresh thyme
