• 1 1/2 Tbl Da Vine Foods' Passion Fruit Puree
• 1/2 cup unsalted butter, melted (1 stick)
• 1 Pinch of cayenne pepper
• 1 Pinch of salt
• 8 thin slices of SPAM (traditional uses 8 slices Canadian bacon)
• 4 English muffins split
• 2 tsp white vinegar
• 8 eggs
• 1 Salt and pepper, to taste

• 1 Fresh chopped parsley, for garnish
