Ingredients

• 1/2 tsp cornstarch
• 1/4 tsp (1 ml) white vinegar
• 1 egg white, at room temperature
• 1/4 cup (55 g) sugar
• 1 1/2 cups (375 ml) 35% whipping cream
• 6 tbsp (50 g) icing sugar
• 1/2 vanilla bean, the seeds only
• 1 can (435 g) chestnut purée
• 1/2 cup (65 g) icing sugar
• 1 tbsp (15 ml) dark rum
• Icing sugar, for dusting
