• 1 large egg yolk beaten with 1 tablespoon water
• Everything bagel seasoning (salt included)
• 1 & 1/2 cups Monterey Jack cheese, grated
• 2 cups sharp Cheddar cheese, grated
• 1 tbsp corn starch plus 1 teaspoon
• 1/4 tsp Kosher salt
• 3 dashes hot sauce
• 1/8 tsp ground mustard
• 1 cup evaporated milk
• 1/2 cup heavy cream
