Scallions and ginger define Shanghainese cooking and are used here in three ways to layer flavor on fresh clams.
Ingredients
- 455 grams (1 pound) littleneck or razor clams
- 2 scallions, roughly chopped into 2-inch (5-cm) segments
- 3 to 4 slices fresh ginger
- 2 tablespoons Shaoxing wine
- 1 tablespoon neutral cooking oil, such as canola or grapeseed
- 2 garlic cloves, minced
- 1 teaspoon minced fresh ginger
- 2 scallions, minced (white and light green parts separated from the dark green parts)
- 2 tablespoons light soy sauce
- 1 tablespoon granulated sugar
- 1 teaspoon fresh minced ginger
- 2 tablespoons neutral cooking oil, such as canola or grapeseed
