Shepherdess pie - Netmums

Ingredients

• 2 tbsp olive oil
• 1 onion, chopped
• 1 red or yellow pepper, deseeded and finely chopped
• 1 carrot, grated
• 5 mushrooms, chopped
• 1 tbsp tomato puree
• 200g potatoes
• 400g chopped tomatoes (or passata)
• 1 tsp dried oregano
• 1 x 200g tin sweetcorn, drained
• 1 x 400g tin green lentils
