Ingredients

• 225 g dried red lentils
• 1 red onion diced
• 2 large carrots sliced
• 1 celery stick sliced
• 1 parsnip diced
• 1 crushed garlic clove
• 2 pints of vegetable stock
• 2 tsp paprica
• freshly ground black pepper
• 1 tblsp freshly chopped chives to garnish
• 6tbsp low fat fromage frais and fresh crusty bread to serve.
