Ingredients

• 4 whole live lobster
• 1/4 cup unsalted butter
• 1 medium shallot, finely chopped (about 1/3 cup)
• 2 medium garlic cloves, finely chopped (about 1 1/2 tsp.)
• 2 3/4 cups thinkly sliced cremini mushrooms
• 3/4 cup heavy whipping cream
• 2 large egg yolks
• 2 Tbsp dry sherry
• 1/2 tsp. kosher salt
• 1/4 tsp cayenne pepper
• 1/2 cup plus 2 Tbsp grated Parmesan cheese, divided
• Parsley, chopped
