• 210g tin pink salmon
• 210g tin red salmon
• 1 Spanish onion, chopped
• 1 garlic clove, diced
• 2 tablespoons mustard seeds
• zest of a lime
• fresh herbs (tarragon and parsley), chopped
• 1 cucumber, peeled and cut into ribbons
• 500ml sugar syrup
• ½ cup of vinegar
• 1 tablespoon red chilli (seedless), diced
• 1 tablespoon ginger, diced
• 1 tablespoon fresh coriander, chopped
