Ingredients

  • 1 tablespoon vegetable oil
  • 1 teaspoon mustard seeds (rai)
  • 10 curry leaves (kadi patta)
  • 1 pinch asafoetida (hing)
  • 1 medium size onion, finely chopped
  • 1 teaspoon tsp garlic paste or 4 cloves, minced
  • 1 teaspoon ginger paste or 1-inch fresh ginger, grated
  • ½ teaspoon turmeric powder
  • 3 teaspoons sambar masala powder
  • ½ teaspoon green chilies, finely chopped (optional)
  • ½ teaspoon black salt (kala namak)
  • 3 medium size tomatoes, finely chopped or 1 (28-oz) can diced tomatoes
  • 1 white gourd, chopped into medium-sized chunks
  • 1 carrot, chopped
  • 1 potato, chopped into medium-sized chunks
  • 1 cup toor daal (pigeon pea) soaked 4 hours, drained
  • 5 cups water
  • salt to taste
  • 2 teaspoons lemon juice
  • Chopped cilantro or parsley (optional)
