Sambar Soup Recipe | Veggie Fest
To make the perfect South Indian meal, this spicy warming soup is often served with masala dosas (lentil crepes) or idlis (rice dumplings) and a side of coconut chutney.
Ingredients
- 1 tablespoon vegetable oil
- 1 teaspoon mustard seeds (rai)
- 10 curry leaves (kadi patta)
- 1 pinch asafoetida (hing)
- 1 medium size onion, finely chopped
- 1 teaspoon tsp garlic paste or 4 cloves, minced
- 1 teaspoon ginger paste or 1-inch fresh ginger, grated
- ½ teaspoon turmeric powder
- 3 teaspoons sambar masala powder
- ½ teaspoon green chilies, finely chopped (optional)
- ½ teaspoon black salt (kala namak)
- 3 medium size tomatoes, finely chopped or 1 (28-oz) can diced tomatoes
- 1 white gourd, chopped into medium-sized chunks
- 1 carrot, chopped
- 1 potato, chopped into medium-sized chunks
- 1 cup toor daal (pigeon pea) soaked 4 hours, drained
- 5 cups water
- salt to taste
- 2 teaspoons lemon juice
- Chopped cilantro or parsley (optional)
