Originating from the Canary Isles, this piquant green sauce works well with all things fish, chicken and vegetable.
Ingredients
- 1 bunch coriander
- ½ a bunch flat leaf parsley
- 3 large garlic cloves
- 2 green peppers
- 2 green chillies
- 1 tbsp. salt + extra for final seasoning
- ¼ teaspoon cumin
- 200mls extra virgin olive oil
- 2 tbsp. each sherry vinegar & lemon juice
